About Us

Fancy Fungi Ltd is an exotic and gourmet mushroom production enterprise run in partnership by Nikk George and Nickey Dempsey.

 

Fancy Fungi has been in partnership since 2001.

The business has been developed from a hobby to a profitable enterprise. Today it produces on average 300 to 400 kg of mushroom per week 18,200 kg a year.

 

We buy or grow our own wheat straw, produce our own compost and grow a selection of high quality fresh exotic and gourmet mushrooms naturally and chemical free, selling directly to wholesalers, restaurants and consumers around the country.

 

 

Over a 3-4 year period we have used our own personal experience, painstaking trial and error to research and develop the process of producing 4 specimens of mushrooms.

Results were documented of each experiment amongst the variables of compost, light, heat and humidity. The addition and ratio of each ingredient was altered to formulate the correct recipe.

 

We have now developed a unique process of farming four specimens of exotic and gourmet mushrooms. Our primary market would be in the top end of the nationwide hospitality sector.  

 

 

 

We started this business from a hobby of picking wild mushrooms for ourselves and then for a few local restaurants.

The demand grew, so we spent over a year researching the possibilities of growing these mushrooms out of season and commercially.

We used our own personal experience, painstaking trial and error to research and develop the process of producing exotic and gourmet mushrooms. We now have successfully grown 4 exotic/gourmet mushrooms, Grey Oyster, Golden Oyster, Shiitake and Pioppino. New products are constantly being researched and developed, but it can take up to 18 months to perfect the process.

We have now developed a system for growing a variety of exotic and gourmet mushrooms for the top end of the hospitality sector.
